Bacon Brussels Sprouts
Ingredients
2 lbs Brussels sprouts
.5 lb bacon (typically half a package)
1 shallot
dutch oven or very large cast iron skillet
salt, pepper, and garlic powder to taste
Instructions
Cut the bacon into smaller pieces by stacking the slices and cutting evenly to maintain the width, but not the length.
Cut each Brussels sprout down the middle.
Chop up the shallot
On medium-high heat cook the bacon bus until they are crispy and remove up a small bowl.
On high heat cook all the Brussels sprouts in the bacon fat, creating a bit of a fried char, then reduce to medium and put on the lid for a few minutes until more tender.
Add the bacon and shallot back in and mix evenly throughout.
Put lid back on for a little more until the shallots cook slightly.
