Spinach and Strawberry Salad

Ingredients

Salad:

  • 6 cups Fresh Baby Spinach
  • 1 1/2 cups Fresh Strawberries, hulled and sliced
  • 1/2 cup Walnuts, lightly toasted
  • 1/3 cup Crumbled Goat Cheese
  • 1 Red Bell Pepper, thinly sliced
  • 1/4 cup Thinly Sliced Red Onion
  • 1/4 cup Dried Cranberries or Cherries (optional)
  • 1 Avocado, diced (optional)

Vinaigrette:

  • 1/4 cup Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Honey or Maple Syrup
  • 1 tsp Dijon Mustard
  • 1/4 tsp Salt, or to taste
  • 1/4 tsp Black Pepper, or to taste

Method

  1. Prepare the Salad:
    • Wash and dry the spinach thoroughly and place it in a large salad bowl.
    • Add the sliced strawberries, toasted walnuts, crumbled goat cheese, red bell pepper, red onion, and any optional ingredients like dried cranberries or diced avocado.
  2. Make the Vinaigrette:
    • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until emulsified.
  3. Assemble the Salad:
    • Drizzle the vinaigrette over the salad just before serving. Toss gently to combine and ensure everything is evenly coated.
  4. Serve:
    • Serve immediately as a refreshing side dish or light entrée. Enjoy!
