Spinach and Strawberry Salad
Ingredients
Salad:
- 6 cups Fresh Baby Spinach
- 1 1/2 cups Fresh Strawberries, hulled and sliced
- 1/2 cup Walnuts, lightly toasted
- 1/3 cup Crumbled Goat Cheese
- 1 Red Bell Pepper, thinly sliced
- 1/4 cup Thinly Sliced Red Onion
- 1/4 cup Dried Cranberries or Cherries (optional)
- 1 Avocado, diced (optional)
Vinaigrette:
- 1/4 cup Olive Oil
- 2 tbsp Balsamic Vinegar
- 1 tbsp Honey or Maple Syrup
- 1 tsp Dijon Mustard
- 1/4 tsp Salt, or to taste
- 1/4 tsp Black Pepper, or to taste
Method
- Prepare the Salad:
- Wash and dry the spinach thoroughly and place it in a large salad bowl.
- Add the sliced strawberries, toasted walnuts, crumbled goat cheese, red bell pepper, red onion, and any optional ingredients like dried cranberries or diced avocado.
- Make the Vinaigrette:
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until emulsified.
- Assemble the Salad:
- Drizzle the vinaigrette over the salad just before serving. Toss gently to combine and ensure everything is evenly coated.
- Serve:
- Serve immediately as a refreshing side dish or light entrée. Enjoy!
