Sourdough Discard Pancakes
Ingredients
- 1 cup sourdough discard (straight from the fridge)
- 1 large egg
- ¼ cup milk (or water if needed)
- 1 tablespoon melted butter or oil (optional)
- Pinch of salt
- ½ teaspoon baking soda
Optional
- 1 teaspoon sugar
- Cinnamon
- Vanilla
- Bacon bits
Method
Mix the batter
Add the sourdough discard, egg, milk, melted butter (if using), salt, and baking soda to a bowl.
Whisk until combined. Lumps are fine.Rest
Let the batter sit for about 5 minutes. Small bubbles may form.
Heat the pan
Heat a nonstick skillet or griddle over medium heat. Lightly butter or oil if desired.
Cook the pancakes
Spoon about ¼ cup batter per pancake onto the pan.
Cook until bubbles appear on the surface and the edges look set.Flip
Flip and cook for about 1 more minute, until golden.
Serve
Stack and serve with butter, maple syrup, or your favorite toppings.
