Sourdough Discard Pancakes

Ingredients

  • 1 cup sourdough discard (straight from the fridge)
  • 1 large egg
  • ¼ cup milk (or water if needed)
  • 1 tablespoon melted butter or oil (optional)
  • Pinch of salt
  • ½ teaspoon baking soda

Optional

  • 1 teaspoon sugar
  • Cinnamon
  • Vanilla
  • Bacon bits

Method

  1. Mix the batter

    Add the sourdough discard, egg, milk, melted butter (if using), salt, and baking soda to a bowl.
    Whisk until combined. Lumps are fine.

  2. Rest

    Let the batter sit for about 5 minutes. Small bubbles may form.

  3. Heat the pan

    Heat a nonstick skillet or griddle over medium heat. Lightly butter or oil if desired.

  4. Cook the pancakes

    Spoon about ¼ cup batter per pancake onto the pan.
    Cook until bubbles appear on the surface and the edges look set.

  5. Flip

    Flip and cook for about 1 more minute, until golden.

  6. Serve

    Stack and serve with butter, maple syrup, or your favorite toppings.
