Grandma Bella’s Rum Cake

Ingredients

Grandma's version

  • 1 15.25oz Box Duncan Hines (Classic Yellow) / butter cake mix
  • 1 3.5oz Box Vanilla Pudding or measure from a 5oz
  • 6 oz vegetable oil
  • 6 oz rum (Dad claims that she used rum extract)
  • 5 eggs
  • 1.5 tsp almond extract (optional)

My low-carb attempt

  • 1.25 cups almond flour (might need to update this after attempting)
  • .75 cup equivalent sugar substitute such as Erythritol
  • 1 tsp baking powder
  • .25 tsp salt
  • 4 eggs
  • 3.5 oz cream cheese
  • 4 tablespoons soft butter
  • 6 oz rum
  • 1 tsp vanilla (will need to experiment with almond as well)

Instructions

  1. Mix all ingredients
  2. Spray pam in bunt cake mold
  3. Fill in mold
  4. Bake 350F for 1 hour
  5. Flip cake from mold
