Grandma Bella’s Rum Cake
Ingredients
Grandma's version
- 1 15.25oz Box Duncan Hines (Classic Yellow) / butter cake mix
- 1 3.5oz Box Vanilla Pudding or measure from a 5oz
- 6 oz vegetable oil
- 6 oz rum (Dad claims that she used rum extract)
- 5 eggs
- 1.5 tsp almond extract (optional)
My low-carb attempt
- 1.25 cups almond flour (might need to update this after attempting)
- .75 cup equivalent sugar substitute such as Erythritol
- 1 tsp baking powder
- .25 tsp salt
- 4 eggs
- 3.5 oz cream cheese
- 4 tablespoons soft butter
- 6 oz rum
- 1 tsp vanilla (will need to experiment with almond as well)
Instructions
- Mix all ingredients
- Spray pam in bunt cake mold
- Fill in mold
- Bake 350F for 1 hour
- Flip cake from mold
