Brined Grilled Chicken

Ingredients

Note: ingredients can be multiplied as needed

  • 2 chicken breasts

  • 2 cups water

  • 2 tbsp salt

  • 1/4 cup soy sauce

  • 1 tbsp brown sugar

  • 1 tbsp sugar substitute (or more brown sugar)

  • 2 tbsp olive oil

  • 2 tbsp lemon juice

  • 2 cloves crushed garlic (~tsp)

  • 1/8 tsp ginger powder (optional)

  • 1/2 tsp toasted sesame oil (optional)

Instructions

  • Stir water and salt into large vessel until the water becomes clear

    again. Can take a minute or two

  • Put in rest of ingredients except chicken and stir for 1-2 minutes

    until everything has mixed as well as possible

  • Submerge all chicken into brine

  • Cover with plastic wrap and refrigerate for 24 hours

  • Grill
